There is not much to it: get one, get a good microphone
, plug the microphone
into the looper, start playing, stomp onto it to start recording, stomp onto it to stop recording, start again and repeat. Using a headphone can help since you can set the tempo of a song beforehand and hear a click to help you stomping in time.
Plus advanced models allow you to record and switch to different parts, as shown in your video where the artist switches from A part to B part. And obviously this works well with minimalist, repetitive and modal music.
« Boss » manufacturer's samplers are well known and valued. If I'm not mistaken, it's what the artist uses in the video you linked. Often times those machines provide a basic collection of drum beats to get you started, but you can record your own percussion as demonstrated here.
I've never much used this type of gear but have seen it from time to time.
